One of my favorite foods to eat especially when I was sick were BEETS! Not only did I enjoy eating them but it was helpful in naturally combating anemia and the regenerating new red blood cells in the body. Sometimes I’d just boil or chop them up to eat, add them in a salad, or blended them together in a juice! Beets were extremely helpful for me. Now I know what your possibly thinking…who wants to eat beets, let alone drink it in a juice? Well, I developed a solution for that…I learned to be creative with them, mix and match by adding them to other vegetables which enhanced the flavor. Occasionally, I would add carrots to the beet juice for extra flavor. Most of the time, I just liked to eat them as is, boiled and chopped up.
Organic ACAI Juices were another smoothie option for me when I didn’t have much of an appetite. They have a lot of vitamins and minerals. Citrus fruits like oranges blended into smoothies with cantaloupes were also helpful in building up Vitamin C. I love grapefruits as well but it was important to be aware of other factors and interactions with grapefruit. Concord Grapes/Grape Juice has lots of vitamins that were beneficial and also a good source of Vitamin C. Whole Grain Oatnut Bread is rich in fiber and nutrients. This was my typical choice of bread and an excellent carbohydrate source which is essential for providing energy. Some of my protein preferences included: steak, fish, turkey, and chicken. Typically, I enjoyed combining them with green leafy vegetables.

Throughout her journey with her illness, Elvelyna has exceeded beyond expectations and has always managed to keep her dreams, goals, and aspirations in sight. She hopes to share this incredible story with other patients suffering with sickle cell anemia and other debilitating illnesses as an inspiration to continue to aim high and never lose hope. While pursuing a degree in her passion, nursing, Elvelyna seeks in making a difference and touching the lives of others just as many nurses have touched and impacted her life. In an interview with NBC 10 News, Elvelyna shares her experience dealing with sickle cell anemia and interest in upcoming research that may benefit the lives of people suffering with sickle cell anemia. She said, “It’s important that people really see what we go through and understand that it’s painful. The pain is agonizing. It’s unbearable.”
